Who doesn’t love a good bread & cheese combo?! I sure do. I could practically eat any combo of cheese & bread for every single meal. Because of my obsession, I am always trying ways to adapt flour-based recipes to add more nutritional value. This simple, wholewheat white cheddar scone is a healthier version than your traditional scone.
Note: I have called these a healthier version of a white cheddar scone, not a healthy version. This super simple recipe incorporates whole wheat flour, lighter dairy and no butter.
A traditional scone, made with a base of all-purpose flour and heaps of butter will give you the flakey scone layers everyone loves. Substituting wholewheat flour instead of all-purpose flour and removing butter will give you a more dense end result with less flakey-ness, but these are still equally as delicious and a little bit health conscious. If you are looking for a full-flakey, super moist cheddar scone, I suggest a different recipe to not disappoint!
One of the best parts of this recipe is how few ingredients there are and quick they are to prep. They can be on a plate within 30 minutes of starting – easy! Keep on reading for a super simple, healthier version of a white cheddar scone recipe.
Ingredients:
- Wholewheat Flour
- All Purpose Flour
- Mature White Cheddar Cheese
- Single Cream
- Chives
- Scallions
- Baking Powder
- Salt
Tips before you begin:
- You do not need a stand mixer for this recipe – actually, they turn out better when you don’t use one. A wooden spoon for folding will work perfectly.
- Have a floured surface ready to go before you start so you can roll the dough out quickly & easily.
- If the dough is super sticky – you may have over mixed. But don’t worry, they will still bake just fine!
- If the dough is dry and won’t stick together, you can add a tablespoon of cream before rolling out.
- Best served fresh, after having cooled for a few minutes. They can also be warmed up nicely the next day in the oven.
Wholewheat White Cheddar Scones with Chives & Scallions
Ingredients
- 1 ½ cups wholewheat flour
- 1 cup all purpose flour
- 1 tablespoon baking powder
- 2 cups grated, mature white cheddar cheese for best results, use a block of cheese and grate it, rather than pre-bought grated cheese
- ¾ teaspoon salt
- ¼ cup diced, fresh chives keep some aside for garnish
- ¼ cup diced scallions
- 1 ¾ cups single cream plus 2 tablespoons
- sprinkle kosher or himalayan salt
Instructions
- Preheat the oven to 200°C or 400°F
- In large bowl, add: 1 ½ cups wholewheat flour, 1 cup flour, 1 tablespoon baking powder, ¾ teaspoon salt, 2 cups grated mature white cheddar cheese, ¼ cup diced, fresh chives and a ¼ cup diced scallions. Gently mix this all together using a fork or a whisk.
- Add 1 ¾ cups of single cream to the large bowl.
- Using a wooden spoon, stir the cream in with the dry ingredients until just incorporated.
- Transfer the dough to a lightly floured surface and knead a couple of times, until a ball of dough is formed.
- Flatten the dough out to about ½ inch in thickness, using your hands or a rolling pin.
- Using a sharp knife, cut the dough into smaller portions. If rolled out into a circle, you can cut into pizza-like slices, or into smaller squares. Smaller squares will give you smaller, biscuit looking scones.
- Place onto baking sheet lined with a silicone liner or parchment paper.
- Using the 2 tablespoons of cream you still have left, brush the tops of each scone. Sprinkle first with a himalyan or kosher salt, and then sprinkle with chives, cheddar cheese.
- Pop these babies into the oven for 16 minutes. They will brown all over, ensuring the middle is cooked. Note: as always, oven heats vary. Keep an eye on your scones, if they look like they are burning, bring them out. If they are doughy on the inside still, leave them in for a few more minutes.
The use of wholewheat flour instead strictly of all purpose flour in this recipe will give a bit more nutritional value, keeping your more full for longer. The elimination of butter and the use of single cream instead of double cream also helps keeping this delicious scone still delicious while keeping it on the relatively healthier side of things.
